Interesting people are interesting more because of how they think than because of what they do. Granted the two are related, still...
There may be people who "do" a lot of things, and have had a wide gamut of experiences, but are not necessarily interesting. They may be good conversationists, but may not be "interesting people".
On the other hand, there may be people who are not necessarily into a lot of things, but have interesting world views, which makes them interesting.
