Here's a recipe for vegan chocolate chip cookies that I made for the holidays. My son loved them and so it was a home run! :-)
Ingredients
Whole wheat pastry flour 1.5 cups
Steel-cut instant oats 1 cup
Baking Soda .75 tspn
Baking Powder .25 tspn
Walnuts 1 cup
Semi-sweet (vegan) chocolate chips 1.5 cups
Brown sugar 1 cup
Honey .5 cup
Salt .5 tspn
Canola or Vegetable Oil .5 cup
Soy/Almond milk .5 cup
*Almond Butter 1 Tb spn
Vanilla extract 1 Tb spn
*Almond Butter: I used fresh ground almond butter. You can make your own Peanut Butter and Almond Butter at Whole Foods. This is what I did. The taste of fresh ground nut butters is completely different from that of pre-packaged ones.
Procedure
1. Mix all the flour, oats, salt, sugar, baking powder and baking soda together.
2. Mix the honey and the oil together thoroughly, then add the almond butter and beat it nicely to make it uniform. Add soy/almond milk and the vanilla extract to it.
3. Mix the dry and wet ingredients together. Mix evenly, uniformly and thoroughly.
4. Preheat oven to 350 degrees.
5. Add chocolate chip cookies and walnuts and again mix thoroughly.
If the dough seems too dry, add a teaspoon or two of soy/almond milk.
6. Set the dough aside for 5 minutes.
7. Transfer dough to cookie sheets with a tablespoon, making rounded lumps and then flattening them some. They should be places at least 1 inch apart on all sides.
8. Bake for 15-18 mins, one cookie sheet at a time.
